Warm leeks with toasted hazelnut romesco, rocket and aged Jerez vinegar

My wife hates onions. She says they remind her of little rats tails. I believe it's the result of a childhood trauma that she refuses to discuss So we use leeks instead. Now anyone with a garden knows that when things are ready to pick, they are ready to pick. So what to do with a whole row of leeks?
