Warm leeks with toasted hazelnut romesco, rocket and aged Jerez vinegar

My wife hates onions. She says they remind her of little rats tails. I believe it's the result of a childhood trauma that she refuses to discuss So we use leeks instead. Now anyone with a garden knows that when things are ready to pick, they are ready to pick. So what to do with a whole row of leeks? Poach them off in a court bouillon and then cover them with vinaigrette . 
Romesco sauce is a Spanish classic. Made by grilling sweet peppers, tomatoes and garlic then pounding it Ito a paste with toasted hazelnuts, olive oil and vineger . Now on the specials board at Al Lago.
