Recipies.Mojo picon.

Mojo Picon is a fantastic sauce from the Canary Islands.It adds a smoky kick to meat and fish.

2 red peppers,chard over and open flame untill black all over.
( then peeled.do not rinse with water or you will loose the flavor!)
1 hot piri-piri chilli.
2 cloves garlic.
1 Tb.ground spanish paprica.
2 Tb.ground cumin.Toasted in a hot dry pan.
1/4 cup Jerez vinigar.
1 cup extra virgin olive oil.
Blend peppers and garlic with a hand held mixer untill smooth.add toasted spices and viniger.Then stream in the olive oil with the motor running to emusify.
This sauce will last about two weeks if kept refridgerated.
